Vegetarian Faux Chicken Patties
Process the 'chicken' in a food processor and then transfer it to amedium mixing bowl. Run the celery, onion and green pepperthrough the processor. Add the vegetables to the mixing bowl andstir in the eggs, stuffing, salt and pepper; mix well. Form intopatties.In a medium frying pan heat olive oil over medium-high heat. Frypatties on each side until browned.

- 1 celery
- 1/2 small onion
- 1/4 large green bell pepper
- 4 eggs, beaten
- 1/2 cup dry bread stuffing mix
- salt and pepper to taste
- 1 tablespoon olive oil
